How to Clean a Cuisinart ICE-21 Ice Cream Maker
The Cuisinart ICE-21 uses a pre-frozen bowl rather than a built-in compressor. Its removable bowl contains cooling liquid inside a sealed wall, so it should not be treated as an ordinary metal mixing bowl. Cleaning requires three separate decisions: how to remove frozen dessert without scratching, which parts can be hand-washed, and how to dry and store the bowl for the next batch. This guide covers ICE-21-series freezer-bowl machines. Compressor models, soft-serve dispensers and other Cuisinart ice cream makers have different assemblies and need their own instructions.

Step-by-step instructions
Step 1: Switch off before removing dessert
Turn the switch off, unplug the machine and wait until movement has stopped. Remove the lid and paddle according to the booklet. Transfer dessert into a separate freezer-safe container using a rubber spatula or suitable wooden spoon. Never scrape with a knife or sharp metal scoop to recover the last frozen layer. Keep utensils out while the machine runs. Place the unplugged motor base away from the washing area so splashing water cannot turn a removable-parts job into an electrical spill.
Step 2: Separate edible leftovers from cleaning residue
Move dessert intended for eating into appropriate storage promptly; do not leave it on the counter while you clean. The ICE-21 booklet says the freezer bowl is not for storing frozen dessert longer than 30 minutes. Once cleaning starts, remaining scraps are wash residue, not a later serving. Check the paddle edges and lid opening for trapped mix-ins before applying water. This makes the wash easier and prevents a piece of fruit or chocolate from being overlooked beneath an otherwise clean-looking rim.
Step 3: Clean the freezer bowl gently
Hand-wash the bowl with warm soapy water and a soft sponge. Give stubborn frozen residue a chance to release instead of chiseling it off. Do not expose the bowl to a stove, flame, boiling-water treatment or other concentrated heat. The official ICE-21 booklet excludes dishwashing the freezer bowl and abrasive cleaning implements. Pay attention to the inner surface and rim without prying at the sealed construction. If the bowl is cracked or leaking, stop using it and contact Cuisinart.
Step 4: Wash the paddle and lid separately
Use warm soapy water for the mixing paddle and lid, turning each part to inspect edges, corners and the ingredient opening. A small soft cleaning brush can help where your sponge cannot reach, but avoid a tool that scratches plastic. Rinse away visible soap and food residue. This guide uses the booklet's hand-washing method rather than assuming every removable piece belongs in a dishwasher. Examine the paddle for cracks or distortion before drying it; a damaged mixing part should not be returned to service because it appears clean.
Step 5: Wipe the motor base without flooding it
Use a damp cloth on the unplugged base and follow with a dry one. Keep liquid away from the switch, cord entry and drive area. Do not place the base in the sink or remove its underside to chase a spill. Check for dried drips around the accessible top and feet, changing the cloth as residue transfers. If mixture entered an opening, describe the incident to Cuisinart. Routine external cleaning cannot verify the condition of the enclosed motor or make internal moisture safe.
Step 6: Dry before freezing or reassembly
Dry all washed parts thoroughly, including the bowl's outside and underside. The manual specifically says not to put a wet bowl in the freezer. Inspect in good light and feel for remaining droplets rather than assuming a quick wipe reached every edge. Only the freezer bowl belongs in the freezer for preparation; do not store the base, lid or paddle there. A clean drying rack helps keep separated parts out of dirty sink water while you finish the rest of the kitchen.
Step 7: Store for the next batch, not just the next hour
Keep the clean bowl level when preparing it for freezing, following the booklet's freezer guidance, and protect it from contamination. Store the dry lid and paddle where they will not be bent or mixed with sharp utensils. Before the next recipe, verify that the bowl is fully frozen; a clean bowl is not necessarily a ready bowl. If a batch fails to thicken, investigate freezing time and recipe conditions instead of using abrasive cleaning to change the bowl's surface.
